Well, week 2 of the 100 Days of Real Food Challenge has come to a close.  Here are some of the highlights 🙂  Hope you Enjoy!!

Bulgur (recipe from Emily @ DailyGarnish.com).  I also had a salad on the side with a little of the same lemon vinaigrette that was in the bulgur. The bulgur was amazing!  I can’t wait to have it again!  Definitely staying on my list of go to recipes.  Also, look what I got…

Homemade granola… This stuff is addicting! (Adapted from 100 Days of Real Food). I did everything the same I just added some walnuts and I used whole flaxseed.  I also skipped the seeds because I just didn’t have any at the time.  One morning I added a banana to the granola and added some milk..  Yummy!

Black bean tacos on homemade tortillas (recipe here).  My tortillas where a little darker because I used 100% whole wheat flour.  Next time I am going to use 100% white whole wheat flour.  To the tacos I added a little rice, black beans, onion, yellow pepper, cheese and greek yogurt! Yum!  For dessert that night I made…

A fruit smoothie… In the mix was orange juice, banana, and frozen raspberries and blueberries. I love fruit smoothies!!

For lunch one day I had…

A waffle peanut butter and honey sandwich with a days worth of fruit! I was starving that day!!  I loved that I could freeze the homemade waffles and all I had to do was pop them into the toaster!

For a snack one day I had the left over hummus and made some pita chips from some Whole Wheat pitas I had in the pantry and I also had some yellow pepper too…

Saturday morning I was trying to find something fast for breakfast…

homemade bread and some (recipe here)…  For my first attempt at making bread it turned out pretty good although it didn’t rise much in the oven but it was still really good!! and while that was cooking I also made…

Peanut butter and honey blondies (recipe here)…  They are pretty darn good.  I also added some fresh whipped cream with a little maple syrup added to it.  It was so good that I didn’t even get a chance to take a picture.

Well, that was my week all wrapped up into one post!! I am trying to get all of this homework done and it is just crazy!  And the craziness is going to continue because I have decided to take a spring class and two summer classes!  I am just ready to get out of school and start my career.  Well, I am off to get some more homework done! I just thought I would let you all know that I may not be able to update my blog for the next month and a half.  I am coming to the end of my school semester and I have so much work that has to get done.  I have assignments/quizzes due every week and then (due at the end of the semester) I have a…

  • 3 – 4.5 page paper due for sociology
  • 5 – 7 page paper due for American Government
  • 7 – 10 page paper due for my Internet Law class

I will try to do at least one post once a week but I can’t guarantee anything.  I am going to be a busy bee until the end of the semester.  I wish I could do everything, blog twice a day and get all this school work done but I just have to focus on my schoolwork.  Don’t worry if I do not post I will be back April 20 for sure.  While I am away though I will still be taking picture of my eats and I will have posts of all the highlights while I’m away.

This morning I was looking for something fast.  I don’t have a lot of time to cook today so I went with some eggs.  On the side I had some honeydew and cantaloupe, by the way the cantaloupe is already gone.  I think I am going to have to get another one today.  Also, I had some left over waffles from yesterday so I threw them in the freezer, wrapped in plastic wrap.  I thought I would try and put one in the toaster(hoping that it would come out good).  Let me tell you, it was great!  I am definitely going to make and freeze some more.  To wrap up the whole meal I had a glass of milk (it was a whole glass but by the time I finished cooking the eggs it was only half full).  This meal was so easy and with school coming to an end I definitely need some quick ideas for meals.

Well, I am off; I have some much needed grocery shopping to do, laundry and I also have some homework that is due tomorrow that I have to work on.  Have a wonderful Monday!

Ps.  I almost forgot… At the beginning of the 100 Days of Real Food Challenge I thought I would weigh myself to see how much I could lose throughout the 100 Days.  Well today ways that start of week 2 and I am already down 2.75 pounds.  It is just so exciting and I have been eating awesome food and have not been depriving myself with not enough food.  I also feel like I have more energy throughout the day.  It is amazing that eating whole foods. for such a short time, can change the way you feel almost instantly.

Breakfast

This morning I decided to make some more waffles.  They were just so good, my mom wanted some more and I wanted my dad to try them also.  This time I thought I would just have them with some strawberries and maple syrup.  I also had an organic orange on the side.

Today I didn’t end up eating lunch.  The waffles filled me up and I was munching on some cantaloupe and honeydew melon while I was cutting them up and I just wasn’t hungry.

Dinner tonight was simple.  Pasta with mushroom and onion tomato sauce.  I had a couple cans of plain tomato sauce in the pantry so I just sautéed up some onion, cremini mushrooms and garlic.  Then I just poured the mixture into a sauce pan with the tomato sauce and added oregano, parsley, red pepper flakes, salt and pepper.  So good!

For the rest of the night I am going to be looking at recipes and trying to figure out a meal plan for this week.  Also, I am going to finish watching Monsters Inc.  So cute!  I also have to get ready to start school again tomorrow.  I had a week off because of spring break but the semester is almost over.  April 19 and I am free for the summer; I can’t wait!!  Have a great Sunday night!

This morning I had to wake up bright and early to sit at my computer for an hour before I found out that I am not going to the Detroit Tigers Opening Day baseball game.  I am so sad!  I am hoping to still be able to go and hang out around the park before and during the game because even if you don’t have ticket it is still fun.

After waiting so long I was starving by the time I got to eat breakfast.

I made a quick bowl of oatmeal with cinnamon, a teaspoon of honey and strawberries on top.  Definitely never disappoints.  Once I was done eating I was so tired, I don’t know why, maybe it’s this gloomy day.  It’s been raining all night and now it’s snowing.  I can’t wait until spring gets here.  Anyway, since I was falling asleep I decided to take a nap and it was awesome.  When I woke up I was wide awake and definitely ready to make some lunch.

This morning I was going to make whole wheat waffles but I was just so hungry and tired that I thought I would wait to make them.  Once I got up though I was craving waffles so guess what I had…

100% apple juice.

I topped the waffles with strawberries and raspberries, a little butter and a little pure maple syrup. The waffles were so fluffy, filling and 100% better then the premade processed kind you get at the grocery store.  Before I could have eaten all 4 of the waffles if they were the grocery store kind but these I could only eat half.  The rest are in the refrigerator waiting for me when I want a little snack later.  I am definitely going to be making them again!

I was all ready to go out and get some things done today but there is freezing rain in the forecast and I am just not in the mood to venture out in that.

I had 2 eggs with the last of the muenster cheese and some oniony paprika red potatoes.  I also had a glass of 100% orange juice (the best!).  Always a great breakfast.

Lunch

For lunch today I had a salad with some cherry tomatoes, Portobello mushrooms and avocado dijon dressing. So spicy and yummy!

Ingredients for dressing:

1 small avocado

2 Tablespoons Dijon mustard (I used organic)

2 Tablespoons Extra virgin olive oil (In the picture above it says light olive oil but I have been refilling the container with extra virgin)

Salt and pepper to taste (I just added it to the top of the salad after assembling it)

Mix everything together until smooth (I used my magic bullet but u could do this by hand)

Yields: 2 servings

a quarter cup raw almonds and a quarter cup green seedless raisins.

Today is going to be a slow day.  I am getting myself motivated to do some much needed cleaning around the house.  First I am going to tackle the kitchen.  Since starting the 100 Days of Real Food Challenge I have been trying to get all of the processed foods out of sight.  I am also trying to throw away stuff that has been sitting in the refrigerator (like salad dressings) that haven’t been used in a long time and will not be used again.  It is amazing how much bad stuff is in our foods that we don’t realize is there until you look at the ingredients label.

Even though this is only the start of day 3 I have found items in my pantry with ingredients that I can’t even pronounce.  It is just crazy!  As I read more and more about clean eating I am just amazed by how much I didn’t know before.  Who knew light butter wasn’t healthy for you and that you could have real butter instead;  I sure as heck didn’t.  Also, I have been eating reduced-fat cheese for as long as I can remember but now I am eating full fat cheese.

Even after 3 days I am feeling great.  I don’t eat as much as I did with all the processed foods and I am fuller for longer.  Which brings us to breakfast.

I can do this Real food thing for the rest of my life if I can eat (the yumminess) like I did last night for dinner.

I thought what would be faster then breakfast for dinner.  So I made some organic eggs, with a splash of milk and organic munster cheese.  Then I had two slices of Great Harvest honey wheat bread with REAL butter (who knew real butter could taste that good… I sure didn’t).  I am so use to using light butter and all that.  I also had a banana.

Now getting to this morning. I made…

Greek yogurt oatmeal with raspberries and almonds.  I need my fuel to get some of my homework done so I don’t have to stress about it towards the end of the semester.  I am also going to be making a few recipes I found tonight.  I am hoping that they turn out good.  I will definitely be back later with a review of both recipes for sure.
