Breakfast

This morning I decided to make some more waffles.  They were just so good, my mom wanted some more and I wanted my dad to try them also.  This time I thought I would just have them with some strawberries and maple syrup.  I also had an organic orange on the side.

Today I didn’t end up eating lunch.  The waffles filled me up and I was munching on some cantaloupe and honeydew melon while I was cutting them up and I just wasn’t hungry.

Dinner tonight was simple.  Pasta with mushroom and onion tomato sauce.  I had a couple cans of plain tomato sauce in the pantry so I just sautéed up some onion, cremini mushrooms and garlic.  Then I just poured the mixture into a sauce pan with the tomato sauce and added oregano, parsley, red pepper flakes, salt and pepper.  So good!

For the rest of the night I am going to be looking at recipes and trying to figure out a meal plan for this week.  Also, I am going to finish watching Monsters Inc.  So cute!  I also have to get ready to start school again tomorrow.  I had a week off because of spring break but the semester is almost over.  April 19 and I am free for the summer; I can’t wait!!  Have a great Sunday night!

So we are starting to run out of everything in this house so tonight I am planning on going grocery shopping in a little bit so this post is going to have to be a fast one.

For dinner I threw together some potatoes and onions with paprika and then I threw in some lentils.  I know it’s not much but it was really good and I couldn’t find anything else.  Well, time to do some grocery shopping.  Have a wonderful Saturday night!

Tonight I made a great some yummy couscous n’ cheese.  It was so good!

Day3_Dinner

Couscous N’ Cheese

Adapted from 100 Days of Real Food

Ingredients:

2/3 cup whole wheat couscous

1 cup vegetable broth (I used organic)

2 Tablespoons butter

2 Tablespoons Whole-wheat flour

1 cup milk

1 cup cheese (I used muenster cheese but you can use any kind you would like)

Salt and pepper to taste

Optional: 1 cup peas

Directions:

  1. Melt the butter in a sauté pan over medium heat.
  2. Whisk in the flour and keep whisking for about 1 minute until the roux (which is equal parts flour and butter or oil) starts to darken, but does not burn.
  3. Quickly whisk in the milk and turn down the heat to low. Keep whisking until any lumps of flour dissolve.
  4. Stir in the cheese and once it melts add the cooked noodles. Season with salt and pepper.
  5. Serve immediately and enjoy!

Yields: 2 – 3 servings (depend on if you are having it as a side or the main course)

This afternoon I was all ready to make one of the recipes that I had planned to make come to find out that we didn’t have any lemons.  I was so sad that I couldn’t make it.  So now I have to either wait until I get some lemons or just make the recipe without.  I am thinking I will wait.  Due to not having a lemon on hand I had to also think of something else to have for lunch.  I had everything planned out and then when it all went wrong I needed to find something fast because I was starving.

Lunch

Two pieces of honey whole wheat bread, all natural peanut butter, a drizzle of organic honey and raisins on the side.  Since the only ingredient in the peanut butter is peanuts I also added a little sea salt to it.

Once I was done eating lunch I decided to do a little research on real foods since I am doing this 100 Days of Real Food Challenge.  So far I real haven’t found anything that I didn’t already know and some things that I am not sure are correct.  So this means I have some more research to do.

Doing all this research on food was making me hungry so I decided to make some dinner.

Dinner

Tonight I made a sweet potato topped with black beans (added a small onion, garlic and cayenne pepper to the beans), salt and pepper.  Then I made one of the recipes I found online: Oven roasted carrots and kale. This is the first time I had ever tried kale and it wasn’t bad.  I thought it tasted better mixed with the black beans though.  Now I am full and going to go do some work.  Have a wonderful night!

I can do this Real food thing for the rest of my life if I can eat (the yumminess) like I did last night for dinner.

I thought what would be faster then breakfast for dinner.  So I made some organic eggs, with a splash of milk and organic munster cheese.  Then I had two slices of Great Harvest honey wheat bread with REAL butter (who knew real butter could taste that good… I sure didn’t).  I am so use to using light butter and all that.  I also had a banana.

Now getting to this morning. I made…

Greek yogurt oatmeal with raspberries and almonds.  I need my fuel to get some of my homework done so I don’t have to stress about it towards the end of the semester.  I am also going to be making a few recipes I found tonight.  I am hoping that they turn out good.  I will definitely be back later with a review of both recipes for sure.

I wasn’t feeling too good throughout the day so I ended up not getting to the grocery store tonight.  This is going to make finding something to eat in the morning a little harder to start the 100 Days of REAL Foods but I have some oatmeal that I can make and a little bit of milk left so I think I will be good.  As long as I have something to give me fuel to get to the grocery store in the morning:)  So tonight was the lasted processed food that I will eat.

Kahiki General Tso’s Chicken with brown rice.  The only thing that this meal is lacking is some veggies.  Now I am off to eat and to finish watching…

So, before I said pizza was going to be a late lunch but it was more dinner because we didn’t end up actually getting our food on the table until around 5pm.

For dinner we went to…

Yea, it was definitely a gloomy day outside… Anyway, we have been going to this pizza place for a long time and it never disappoints.  To start the meal off we had some yummy sweet bread sticks and antipasto.

See that green olive on my plate? Well, that was the first green olive I have ever had in my life.  It was OK (a little too salty for me) so I think I will stick with the black olives:)  Then about 20 minutes later the pizza came!

Sorry the picture isn’t the greatest but the lighting was bad but it still looks good to me.  Usually we would just get a cheese pizza but this time we got green peppers and onion.  So Good!  A great meal before starting the 100 Days of REAL Food challenge.  Tuesday is the day!  But before then I have to make a grocery list and get some food in the house or I am not going to be eating anything.  So, I think that is what I am going to do.  Later!
