So we are starting to run out of everything in this house so tonight I am planning on going grocery shopping in a little bit so this post is going to have to be a fast one.

Dinner

For dinner I threw together some potatoes and onions with paprika and then I threw in some lentils.  I know it’s not much but it was really good and I couldn’t find anything else.  Well, time to do some grocery shopping.  Have a wonderful Saturday night!

I was all ready to go out and get some things done today but there is freezing rain in the forecast and I am just not in the mood to venture out in that.

Breakfast

I had 2 eggs with the last of the muenster cheese and some oniony paprika red potatoes.  I also had a glass of 100% orange juice (the best!).  Always a great breakfast.

Lunch

For lunch today I had a salad with some cherry tomatoes, Portobello mushrooms and avocado dijon dressing. So spicy and yummy!

Ingredients for dressing:

1 small avocado

2 Tablespoons Dijon mustard (I used organic)

2 Tablespoons Extra virgin olive oil (In the picture above it says light olive oil but I have been refilling the container with extra virgin)

Salt and pepper to taste (I just added it to the top of the salad after assembling it)

Mix everything together until smooth (I used my magic bullet but u could do this by hand)

Yields: 2 servings

a quarter cup raw almonds and a quarter cup green seedless raisins.

Well, now I am off to do some work.  Hopefully I can get to the store tomorrow so I can make some more yummy recipes!  Have a great afternoon.

This afternoon I was all ready to make one of the recipes that I had planned to make come to find out that we didn’t have any lemons.  I was so sad that I couldn’t make it.  So now I have to either wait until I get some lemons or just make the recipe without.  I am thinking I will wait.  Due to not having a lemon on hand I had to also think of something else to have for lunch.  I had everything planned out and then when it all went wrong I needed to find something fast because I was starving.

Lunch

Two pieces of honey whole wheat bread, all natural peanut butter, a drizzle of organic honey and raisins on the side.  Since the only ingredient in the peanut butter is peanuts I also added a little sea salt to it.

Once I was done eating lunch I decided to do a little research on real foods since I am doing this 100 Days of Real Food Challenge.  So far I real haven’t found anything that I didn’t already know and some things that I am not sure are correct.  So this means I have some more research to do.

Doing all this research on food was making me hungry so I decided to make some dinner.

Dinner

Tonight I made a sweet potato topped with black beans (added a small onion, garlic and cayenne pepper to the beans), salt and pepper.  Then I made one of the recipes I found online: Oven roasted carrots and kale. This is the first time I had ever tried kale and it wasn’t bad.  I thought it tasted better mixed with the black beans though.  Now I am full and going to go do some work.  Have a wonderful night!

Today was a not so healthy day!  I was just not in the mood to really cook anything for lunch so I searched through the pantry and found lunch.

Lunch


Some Mac and Cheese with turkey sausage.  So good with the spiciness of the sausage and the cheesiness of the mac and cheese.

After lunch I did some much needed search on the internet for some information on getting a domain name for my blog and also hosting for my blog as well.  With that being said, I have a domain name right now and tomorrow I am hoping to have hosting 🙂  I am so excited!!!  After all this excitement and hours of searching for information I was getting hungry.

Dinner


Dinner was a little bit healthier though.  Some tilapia with roasted broccoli and mushrooms and some potatoes with onion.  The potatoes are cooked in some chicken broth with a little paprika on them (Potato recipe adapted from Guy’s Big Bite).  I didn’t make them exactly like the recipe because I didn’t have all the ingredients but they were still amazing!  Definitely will be making Guy’s version and my version again 🙂
