Well, week 2 of the 100 Days of Real Food Challenge has come to a close.  Here are some of the highlights 🙂  Hope you Enjoy!!

Bulgur (recipe from Emily @ DailyGarnish.com).  I also had a salad on the side with a little of the same lemon vinaigrette that was in the bulgur. The bulgur was amazing!  I can’t wait to have it again!  Definitely staying on my list of go to recipes.  Also, look what I got…

Ball canning jars!!  I bought these to make my pantry more organized…  Thank Emily for the great idea!!

Homemade granola… This stuff is addicting! (Adapted from 100 Days of Real Food). I did everything the same I just added some walnuts and I used whole flaxseed.  I also skipped the seeds because I just didn’t have any at the time.  One morning I added a banana to the granola and added some milk..  Yummy!

Black bean tacos on homemade tortillas (recipe here).  My tortillas where a little darker because I used 100% whole wheat flour.  Next time I am going to use 100% white whole wheat flour.  To the tacos I added a little rice, black beans, onion, yellow pepper, cheese and greek yogurt! Yum!  For dessert that night I made…

So much better the next day when it sat in the refrigerator all night!!  Another night for dessert I made…

A fruit smoothie… In the mix was orange juice, banana, and frozen raspberries and blueberries. I love fruit smoothies!!

For lunch one day I had…

A waffle peanut butter and honey sandwich with a days worth of fruit! I was starving that day!!  I loved that I could freeze the homemade waffles and all I had to do was pop them into the toaster!

For a snack one day I had the left over hummus and made some pita chips from some Whole Wheat pitas I had in the pantry and I also had some yellow pepper too…

Saturday morning I was trying to find something fast for breakfast…

homemade bread and some (recipe here)…  For my first attempt at making bread it turned out pretty good although it didn’t rise much in the oven but it was still really good!! and while that was cooking I also made…

Peanut butter and honey blondies (recipe here)…  They are pretty darn good.  I also added some fresh whipped cream with a little maple syrup added to it.  It was so good that I didn’t even get a chance to take a picture.

Well, that was my week all wrapped up into one post!! I am trying to get all of this homework done and it is just crazy!  And the craziness is going to continue because I have decided to take a spring class and two summer classes!  I am just ready to get out of school and start my career.  Well, I am off to get some more homework done! Later 🙂

I was all ready to go out and get some things done today but there is freezing rain in the forecast and I am just not in the mood to venture out in that.

Breakfast

I had 2 eggs with the last of the muenster cheese and some oniony paprika red potatoes.  I also had a glass of 100% orange juice (the best!).  Always a great breakfast.

Lunch

For lunch today I had a salad with some cherry tomatoes, Portobello mushrooms and avocado dijon dressing. So spicy and yummy!

Ingredients for dressing:

1 small avocado

2 Tablespoons Dijon mustard (I used organic)

2 Tablespoons Extra virgin olive oil (In the picture above it says light olive oil but I have been refilling the container with extra virgin)

Salt and pepper to taste (I just added it to the top of the salad after assembling it)

Mix everything together until smooth (I used my magic bullet but u could do this by hand)

Yields: 2 servings

a quarter cup raw almonds and a quarter cup green seedless raisins.

Well, now I am off to do some work.  Hopefully I can get to the store tomorrow so I can make some more yummy recipes!  Have a great afternoon.

Tonight I made a great some yummy couscous n’ cheese.  It was so good!

Day3_Dinner

Couscous N’ Cheese

Adapted from 100 Days of Real Food

Ingredients:

2/3 cup whole wheat couscous

1 cup vegetable broth (I used organic)

2 Tablespoons butter

2 Tablespoons Whole-wheat flour

1 cup milk

1 cup cheese (I used muenster cheese but you can use any kind you would like)

Salt and pepper to taste

Optional: 1 cup peas

Directions:

  1. Melt the butter in a sauté pan over medium heat.
  2. Whisk in the flour and keep whisking for about 1 minute until the roux (which is equal parts flour and butter or oil) starts to darken, but does not burn.
  3. Quickly whisk in the milk and turn down the heat to low. Keep whisking until any lumps of flour dissolve.
  4. Stir in the cheese and once it melts add the cooked noodles. Season with salt and pepper.
  5. Serve immediately and enjoy!

Yields: 2 – 3 servings (depend on if you are having it as a side or the main course)

OK, I know yummus isn’t a word but I thought it was fun… haha!  As you all know yesterday I was going to make a recipe but I couldn’t because I didn’t have lemon.  My plan was to make hummus and the recipe I have I needed to add lemon. So last night a went searching for a different recipe and I came across Allie’s avocado hummus on Live Laugh Eat.  No lemon in this recipe and so simple.

First I took a can of chickpeas, rinsed and poured into the food processer.

Then added the avocado (starting to go a little bad),

the rest of the ingredients and processed until smooth.  In the end it will look like this…

Avocado hummus and tomatoes on Great Harvest Honey whole wheat bread.  Definitely a great combinations.  Now I just have to start planning for dinner soon and I have no ideas yet.

Well, to start off I am so excited because in the mail I received my Detroit Tigers shirt that I am going to wear for opening day!

I am totally in love with this shirt and the great thing about it is that it was free!  I had a $30 rewards card and didn’t know what I was going to buy until I saw this… I also bought another shirt but it was on backorder so I am waiting not so patiently for it.

The rest of my night was pretty low key.  I just sat around watching my favorite show…

and searched for some great recipes for the 100 Days of REAL Food challenge in these…

So far I only got through two because I was so occupied watching Ghost Adventures but I am planning on looking through more later tonight.

Anyway,  for breakfast I was craving cake.  Not just any cake though, I wanted a yummy fluffy pancake!

This pancake cake is just so good (recipe from Juile) but I added and changed a couple things again.  I added cinnamon and used pecan chips because that was all I had on hand.  Everyone should definitely try this though.  So much easier then regular pancake and so much better!  Well that is it for now I am off to play some Mario Kart on the Wii with my mom…  Definitely fun times!!  Enjoy your Saturday!!
