Breakfast

This morning I decided to make some more waffles.  They were just so good, my mom wanted some more and I wanted my dad to try them also.  This time I thought I would just have them with some strawberries and maple syrup.  I also had an organic orange on the side.

Today I didn’t end up eating lunch.  The waffles filled me up and I was munching on some cantaloupe and honeydew melon while I was cutting them up and I just wasn’t hungry.

Dinner

Dinner tonight was simple.  Pasta with mushroom and onion tomato sauce.  I had a couple cans of plain tomato sauce in the pantry so I just sautéed up some onion, cremini mushrooms and garlic.  Then I just poured the mixture into a sauce pan with the tomato sauce and added oregano, parsley, red pepper flakes, salt and pepper.  So good!

For the rest of the night I am going to be looking at recipes and trying to figure out a meal plan for this week.  Also, I am going to finish watching Monsters Inc.  So cute!  I also have to get ready to start school again tomorrow.  I had a week off because of spring break but the semester is almost over.  April 19 and I am free for the summer; I can’t wait!!  Have a great Sunday night!

I don’t know what it was but I was just so tired last night that I didn’t get around to a post so I am going to do it now.

Snack

A couple hours after I ate lunch I was starting to get hungry again so I sliced up an apple, banana and with some peanut butter.  Since the only ingredient in the peanut butter is peanuts I sprinkled a little sea salt on it.

We are seriously starting to run out of food in this house so I have to do some major grocery shopping soon but I did finally find something to make.  I make some brown jasmine rice, with a mixture of black beans, cherry tomatoes (seeded), onion and cayenne pepper.  On the side I chopped up a sweet potato and roasted it.  I also added a little greek yogurt on top of the rice but I didn’t get a picture of it because I was already a quarter of the way through eating when I thought about using it.  So good!!

Well, I have some things I have to do before Detroit Tigers tickets go on sale this morning!  I am hoping I can get good seats for opening day.  Oh, almost forgot, there is a yummy breakfast coming up this morning!

Snack

Fruit plate… with included an apple, pear, some grapes and 2 kiwis.  After I ran to…

Great Harvest and bought some Honey Whole Wheat bread.  When you walk into the store it smells amazing!  Immediately when I got home I had to have a sandwich.

I wasn’t sure what I really wanted so I sliced up a tomato and sprayed it with extra virgin olive oil, salt and pepper.  I never knew a tomato sandwich could taste so good.

I just got back from running errands and I haven’t even had dinner yet (yes I know it’s 11:30pm) so I will update you on the dinner eats in the morning.  I am going to go eat and relax now.
